1 small onion, minced2 tablespoons lard or bacon fat1 cup blue cornmeal1 cup unbleached flour1 teaspoon salt1 tablespoon baking powder1 cup milk2 eggs, beaten1 cup pork cracklings1/4 cup minced jalape?o1/3 cup grated Monterey jack cheese
Preheat oven to 450 degrees F.
Saut? onion in the lard. Mix together cornmeal, flour, salt and baking powder. Add onion and remaining ingredients; pour the mixture into the hot frying pan. Bake for 20 to 25 minutes.
Cut into wedges to serve.
